If you like pasta (and who doesn't), you'll like this news. Cooking pasta 'al dente', or firm to the bite is better for you. The longer you boil the noodles, the more the starch breaks down, with raises he pasta's glycemic index. This causes your blood sugar level to rise faster - and may increase your junk food cravings, too. Studies show that when you cook spaghetti for 5 minutes, it's glycemic index is 38. After 20 minutes, it almost doubles to 61. But eating al dente doesn't mean you can eat piles of pasta - and stay away from those high calorie sauces!
