Types of Fiber
Soluble Fiber and Insoluble Fiber
Both
soluble and insoluble fiber are undigested. They are therefore not
absorbed into the bloodstream. Instead of being used for energy, fiber
is excreted from our bodies. Soluble fiber forms a gel when mixed with
liquid, while insoluble fiber does not. Insoluble fiber passes through
our intestines largely intact.

Meet Marie!
By now, you've hopefully read some articles by the JakeBreak Nutritionist, Marie Keith. Her latest article takes you along for the 26 grueling miles on her second marathon. Marie is a 31-year old Registered Dietitian living in Oak Ridge, TN. Although she was born in Louisville, KY, she grew up in Nashville. Marie became interested in nutrition through her own personal struggles with maintaining a healthy weight. She also watched her Dad deal with numerous health problems like high blood pressure, diabetes, and obesity. "He made unhealthy food choices, never exercised, and was overweight," said Marie. "I never wanted to go through what he did. I was determined to live life as healthy as possible." Marie's father passed away from cancer in 2004.
Having two brothers, sports were always a part of Marie's life. At a young age, she began playing softball. Then in high school, she tried volleyball and basketball and was a natural at both. It was then she began running for fitness and fun. Now, two marathons, four half-marathons, and several 5k's later, running has turned into Marie's favorite pastime! She also enjoys working out at the gym a few days a week. This summer, she plans on getting a bike "mainly for fun, but also to commute on."
When asked if she realizes she's a role model, Marie blushed and said " I just enjoy helping others make healthy diet and exercise choices that will hopefully improve their lives."

My Marathon Inspiration

On Saturday, April 26, 2008, I ran the Kentucky Derby Marathon in Louisville, KY. This was my second marathon. I have also run 4 half-marathons and several 5k's (3.1 miles). The first marathon I ran was five years ago and it was not a good experience at all -- I had digestive issues (to put it mildly), hit the wall at mile 14, and let my emotions get the best of me a few times. I truly believe that running a marathon is just a much about mental stamina as it is physical endurance - and I struggled with both that time. Because of that awful experience, I was nervous about running the marathon this year. I had also been experiencing knee and hip issues during my training this time around. My goal was to finish the 26.2 miles in 4 hours and 45 minutes. However, I would have been happy with anything less than 5 hours. I am not fast at all, and I definitely don't run to win. I do it for my own personal satisfaction. I started running about 15 years ago to get in shape, and never dreamed it would be a hobby of mine that would got this far!
